Roasted Golden Cauliflower with Coconut Quinoa
Makes 2 Servings
⅔ Cup Quinoa
2 cups filter water
½ Cup Coconut Milk
1 Big head of Cauliflower or 2 small
2 Tsp Turmeric
2 Tsp Cumin
1 Tsp Black Sesame Seeds
2 Tbsp Tahini
2 Tbsp Coconut Oil
2 Tbsp Fresh Cilantro
- Set oven to 400 Degrees
- Wash quinoa several times and put it to boil in the coconut milk and water with 1 tsp turmeric for approx. 15 minutes
- Wash, cut the cauliflower into small pieces and put on baking sheet with Cumin, rest of Turmeric and coconut oil. Mix well.
- Roast for about 10 minutes-toss in oven and continue roasting for another 10-15 minutes.
- When ready, arrange the cauliflower florets on a plate with the quinoa, sprinkle of tahini, cilantro and sesame seeds.
